Mace
Myristica fragrans (aril)
Mace is the crimson net that wraps the nutmeg seed, dried to an amber blade. The flavour is nutmeg’s high notes: clove, citrus and a clean warmth without the oilier body of the kernel. Sold as whole blades and broken mace for extractors and spice packers.
